The opening of Roxy's Market in central Ketchum will be about a month later than planned, according to Mike Lawler, who owns the business with his wife, Roxanne.
Lawler said in a phone interview that the grocery store, located in the building that formerly housed Williams Market, would open at the end of March or early April instead of early March. He said that's because he has made changes that require different equipment, which he is waiting for his supplier to provide. He said one of those changes is the addition of a salad bar.
"We see this as a long-term deal," Lawler said. "So we want to get it right the first time, right as we come out of the gate."
The Lawlers announced in late August that they were remodeling the Main Street building for Roxy's. Since then, construction crews have been hard at work inside and out. Lawler said the exterior work is done except for designing and installing its Roxy's Market sign. The interior remodeling is wrapping up as well. The site has been quiet during the past week due to the Lawlers' waiting for equipment.
"A lot of stuff will come together very quickly," Lawler said.
