The award-winning flax butter is made in Hailey.

Prosperity Organic Foods, based in Hailey, recently won VegNews' Best of Show Award for the Best New Vegetarian Product at ExpoWest 2007, for its product line of Organic Coconut Flax Butter.

"We are so excited about this lovely award," said Cygnia Rapp, founder and president of Prosperity Organic Foods. "With such an enormous show, and with so many amazing products, this is a real honor."

Organic Coconut Flax Butter will be featured in the May/June, 2007 issue of VegNews magazine. ExpoWest 2007 is the largest trade show in the country for organic and natural food.

Organic Coconut Flax Butter is a new vegan butter spread that combines two of the healthiest oils available—organic, extra virgin coconut oil and organic flax seed oil, one of the richest sources of Omega-3 fatty acids.

"We are excited to offer the public a truly wonderful raw and vegan butter spread that is healthy and easy to feed to children," Rapp said.

Organic, virgin coconut oil is of exceptional health value, assisting in cholesterol management as well as many other health disorders, Rapp said

"We don't use any fillers like safflower, canola or hydrogenated oils in Organic Coconut Flax Butter, keeping the list of ingredients very short and easy to understand. Furthermore, all flavoring is done using fresh, organic produce instead of engineered flavors."

Rapp began her company after she developed chronic digestive disorders that prescription drugs made worse. She also was hypoglycemic. A Seattle naturopath practitioner recommended she change her diet by cutting out meat, hard cheese and peanut butter, among other high-protein foods. To replace those sources and control her blood-sugar levels, she turned to the studies of Dr. Johanna Budwig, a German pharmaceutical chemist and physicist.

"I did my research and made foods similar to the ones described by Dr. Budwig, including what is now Organic Coconut Flax Butter," she said. Her recovery was brought about by making a number of changes to her life, but the creation Organic Coconut Flax Butter has been a key supportive component for turning her illness into wellness, she said.

Organic Coconut Flax Butter comes in four flavors: Basil, Sweet Orange, Garlic & Onion, and Original, and is used in place of traditional butter on breakfast foods, in hot cereal, in power shakes and on popcorn. It's available at the Hailey and Ketchum Atkinsons' Markets.
